Saltimbocca alla Romana (Italian cuisine)

 Serving: 2 people

 - 4 thin slices of veal 
 - 2 slices of raw ham 
 - 25 grams of butter 
 - 25 grams of flour 00 
 - 4 sage leaves 
 - a coffee cup of dry white wine
 - salt and pepper

 1. Cover the slices with parchment paper and then beat them with glass to flatten and soften the meat.

 2. Flour each side of the slice and place a piece of raw ham and a sage leaf in the centre of each half.
Block everything with a toothpick, as in the picture.

 3. Put the butter in the pan, and when it browns, add the slices. They must brown over high heat on each side.
